During a leisurely stroll along White Beach recently, Claire and myself met up with some of the Boracay Sun team heading up to Station 1.
They’d had a particularly busy morning and seeing as it was lunchtime, we all popped into one of my long-time favourite places, Ambassador in Paradise, to sample their daily special, “Unlimited Scallops.” If, like me, you are a lover of shellfish, this is an offering not to be missed - especially if it’s at this delightful restaurant.
Resort manager Ryan Alba informed us that their super fresh daily catch arrives early each morning from Banal, in Capiz. That extra little bit of freshness makes a huge difference to the taste. This is one of the reasons that I state that this is one of my favorite places - top quality.
The Scallop dishes on offer are:
Classic Grilled. Baked with Cheese. Chili, Honey and Garlic. Creamy Pasta in Whie Wine Sauce. Pizza. Adobo sa Gata and Scallops Fried Rice. All are served with a sumptuous helping of creamy mashed potato with herb and garlic butters on the side.
Dining alfresco style on the sand has always been one of the pure delights of being on Boracay, and the food, service and ambience at Ambassador in Paradise is as good as it comes. The beachfront location, perfectly manicured gardens, swimming pool setting and luxurious atmosphere makes this an ideal place to enjoy a wonderful meal.
Professional service and attention to detail, no matter how small, makes for a wonderful experience whether you're a resident or a tourist.
